Light Roast Coffee from Kenya
This coffee dollop is made from one of the best Natural processed coffees I’ve had in 2022. The Thuura Women’s Cooperative in Kenya had incredibly balanced fruit and floral notes but lacked that fermented flavor that can be common in naturally processed coffees. When I taste the dollop, I am struck by notes of Strawberries, sweet malt, and subtle florals. The acidity is very noticeable but not unpleasant.

Despite this coffee’s low beginning moisture content, pushing it fast was challenging. This roast was one of the quicker roasts to hit the first crack in an attempt to accentuate the floral notes of the coffee. The overall goal with roasting was to get to the first crack quickly and then hit the brakes hard to get an appropriate development time while not taking the coffee too dark in roast color. Natural processed coffees can deal with shorter development times without becoming grassy, vegetal, or metallic, so I went with a short development time to accentuate the coffee's fruitiness.
